9 Easy Vegan Sausage Rolls made with Puff Pastry


We love a good homemade puff pastry sausage roll in my house.

Warm out of the oven while they are all hot and flaky, or served hot for dinner with chips and baked beans or perhaps cold in a lunch box with salad or grabbed as a quick snack and dunked in ketchup (don't judge me!).

They are just so good and who can say no to puff pastry?

Of course, I'm not saying my husband Graham never picks up a Greggs vegan sausage roll (I don't think they are all that fabulous myself) when he is out working, but nothing beats a freshly homemade sausage roll.

So move over Greggs!

I decided I needed a page to store all my sausage rolls recipes so they were easy to find in one place (do bookmark, pin and share this page).

So I shall share with you my 9 favourite recipes and I'll add more as I create them, so you to can use this as a reference page for easy and delicious sausage rolls everytime you have a craving.

And you won't find any suggestions to stick frozen vegan sausages in some puff pastry. 

Oh no, you can do much better than that with so many delicious fillings.

I will start with a few sausage roll making hints and tips, move on to the recipes, then after the list of recipe (which I will keep updated), I will share some serving suggestions.

Types of puff pastry


There are a few types of puff pastry you can make or buy to make veggie sausage rolls with.

I tend to buy ready-rolled supermarket puff pastry as it's in a perfect rectangle and an even thickness I couldn't ever manage if I was to roll out a block.

It's super convenient and usually good quality.

Here are your options for puff pastry:

  1. Homemade puff pastry - a complete faff, I learned in high school and never again, life is too short, but if making puff pastry is your jam, then I salute you
  2. Rough puff pastry - another option for homemade pastry, but an easier and quicker version
  3. Chilled blocks of puff pastry - from your local grocery store or supermarket, which you need to roll yourself, but does give a better rise than ready-rolled puff pastry
  4. Ready rolled puffed pastry - another chilled option from the supermarket and my pastry of choice
  5. Frozen puff pastry - this can come in ready-rolled sheets or a block, leave in the fridge to defrost these
So a few options for you to pick from.


Is puff pastry suitable for vegans?


A common question I'm asked is, is puff pastry suitable for vegans or a dairy-free diet.

The short answer is yes.

Most shop-bought puff pastry is accidentally suitable for vegans, although it won't say vegan puff pastry, it will just be called puff pastry.

The only ones you generally have to avoid are the packs marked 'all butter' as they are full of dairy butter.

If you aren't sure, check the ingredient list or for the vegan symbol. 

Some will be marked vegetarian, but if you look at the ingredients they are fine for vegans too, they just haven't gone through the process to have it listed as vegan.


Watch out for shrinkflation


Shrinkflation is a term from the UK referring to food that are both reduced from their regular size and at the same time the cost is increased.

It's happening a lot in the UK and I am sure elsewhere and one of the products that has been hit is puff pastry.

I've had to put a warning on all my older posts about this as you now need more than one puff pastry sheet for many of my recipes, alternatively, just be aware there will be leftover filling.

If I haven't mentioned shrinkflation on the recipe page, then it should be ok, just take a close note of the quantity the recipe states and accordingly buy enough puff pastry packages to meet this amount.

It's annoying I know, but the best I can do is make you aware of it.

Of course, you can just use one sheet and then do something else with the leftover filling.

How to get that golden brown finish on sausage rolls without an egg wash


If you aren't vegetarian or vegan, you probably brush a coating of whisked egg on homemade sausage rolls before baking them for that golden finish.

However, if you're plant-based, then egg isn't an option, but there are alternatives.

Either brush your ready-to-bake puff pastry sausage rolls with oat milk (other milks like almond milk are ok too) or brush them with a little olive oil.

The olive oil tends to give a deeper colour, but both work well.

And you can't get better than a silicone pastry brush, I gave my wooden one up years ago as it kept shedding the plastic hairs.

Top 10 tips for making the best vegan sausage rolls at home



Here are my top tips for the best results when making homemade flaky puff pastry sausage rolls.

  1. Make sure you have the correct weight of pastry for the recipe, be aware pastry is now sold in a lower weight and the ready-rolled rectangles are smaller. Buy extra if you need to.
  2. Always preheat your oven and bake the sausage rolls on the top shelf on a non-stick baking paper or parchment lined baking sheet in a single layer.
  3. Have your filling ready before you take the pastry out of the fridge.
  4. Don't leave pastry to come to room temperature before using it. I used to advise this, but formulas have changed and it does defrost and go soft very quickly these days, so unroll it gently and use it right away.
  5. Be generous, but don't overfill each sausage roll, it will make it difficult to seal.
  6. Always rub a little water on the edge of the pastry before pulling over the top pastry to help it seal.
  7. You can stretch the pastry slightly as you pull it over the filling, to give yourself more allowance, but do this gently.
  8. Press the edges down well to seal the pastry, then use the prongs on a fork to go over that, it will tighten the seal and look good.
  9. Always use a sharp knife to cut the pastry, especially if you are cutting large sausage rolls into mini sausage rolls, this will help keep the height and prevent squishing.
  10. Make sure you finish with a glaze of milk or oil before baking for that golden finish.

These spiced potato-filled sausage rolls are something rather special.

They have a filling very similar to a vegetable samosas, but instead of samosa dough (which is often thin like puff pastry) the sausage mixture or should I say potato mixture is encased in golden, flaky puff pastry.

Totally fabulous and kids love them too!

If you always make a big batch of bolognese like I do, then it's nice to do something different with the leftovers. 

I sometimes make a bolognese potato pie, the most gorgeous bolognese quesadillas or these rather moreish bolognese sausage rolls.

3. Spicy Chickpea Sausage Rolls



Every Sunday we take my mum out for the day and often go to a farm shop with a cafe near Kinross (a burgh in Perth & Kinross in Scotland, not far from Dunfermline or Perth).

As well as cafe and farm shop they have a deli counter with the most delicious chickpea sausage rolls.

I often pick a few up for us as the boy loves them for packed lunches.

I knew I had to crack the recipe myself and I have to say I think they may be even better than the originals.

These red kidney bean and cheese sausage rolls have one of the tastiest fillings. 

As well as beans and cheese, there are carrots, herbs and a spicy sauce to perk things up.

To finish them off they have a topping of sesame seeds.

These have to be my most popular sausage rolls and the title is well justified as they are lush.

They have a luxurious mushroom, chestnut and thyme vegan sausage 'meat' filling that is so tasty and a really good texture too.

Particularly popular at Christmas and Easter, my readers love these beauties and I have had so many messages and emails about them.

They are really rather special, although choosing between the different recipes is like choosing between children, you love them all.

These were sausage rolls I used to buy from a local health food shop, but the company went bust and sadly the health food shop eventually closed down too.

My boy kept asking about the sausage rolls so I decided I needed to recreate them myself and blooming; heck they are good.

Once more I think I got these pretty spot on.

7. Vegan Haggis Sausage Rolls



These are filled with a hearty filling that's often found in cold water pastry pies in Scotland or Pehs as they are known in Dundee.

Spiced veggie haggis teamed with a potato and baked beans filling for the ultimate in comfort food.

You can use shop-bought vegetarian haggis (which is suitable for vegans) or my easy homemade vegan haggis.

Unfortunately, the supermarkets usually stock the veggie haggis in the meat aisle, so apologies ahead of time for you having to venture down that part of the supermarket.

It's also available to buy online and can be frozen.

8. Red Lentil Sausage Rolls



I had thought about creating a red lentil sausage roll for a while, but wasn't sure what flavours I would pair it with.

Then I remembered my regular dahl recipe, and decided that the spices used in that would be fabulous in sausage rolls and it does work really well.

If you like things spicy, you can add extra chilli flakes or chilli powder to these rather comforting and warming sausage rolls.

9. Hidden Veg Sausage Rolls




I created these sausage rolls when my son was getting on my nerves turning down veg one night.

Well, I thought, like hell and proceeded to make sausage rolls packed with good stuff like celery, courgette, carrots, mushrooms and lentils.

Got some tomato in there too with tomato puree and some spices to add plenty of flavour.

I cut them into mini sausage rolls and baked them until golden.

Was he any the wiser? NO! Was I the victor? YES!

Sausage roll toppings



Apart from a golden glaze, you can add some toppings to sausage rolls to make them look bonnie, add extra nutrition and add flavour.

Here are a few topping ideas.

Add them after you have glazed the sausage rolls before baking.

  • Sesame seeds
  • Nigella seeds
  • Poppy seeds
  • Dried herbs
  • Chilli flakes
  • Nutritional yeast
  • Grated vegan cheddar

Serving sausage rolls




Of course, you can just eat sausage rolls straight out of the oven as they are, but how else to serve them?

I like to serve them nursery style, served hot with chips or mashed potato and baked beans or peas.

A big favourite with kids.

Some of my facebook group Living on the Veg, make my sausage rolls and serve them as part of a simplified Sunday roast, with lots of veg, roast or mashed potatoes and lashings of gravy.

I've even seen someone serve a sausage roll in a sandwich, between two buttered slices of soft white bread with tomato ketchup or brown sauce.

Not sure how I feel about that one, but I will leave you to decide.


You gotta dunk!



If you're eating sausage rolls for a snack or a quick lunch, you gotta dunk.

Come on now you know you do, you wouldn't be a true Brit if you didn't.

So in honour of our quirky ways, here are some dunking ideas.

  • Tomato ketchup - has to be your first port of call, although have you tried my chipotle ketchup, it is a step beyond, oh so good
  • Brown sauce - HP of course or Gold Star chip shop brown sauce
  • BBQ sauce - for more of an American touch
  • Mustard - wholegrain mustard, dijon mustard, English mustard or yellow American mustard
  • Buffalo sauce - I have a good recipe for buffalo sauce too, tasty stuff
  • Firecracker mayo - a popular Asian style condiment served in Wagamama
