Vegan Slow Cooker Sausage Stew with White Beans & Peppers

VEGAN SLOW COOKER SAUSAGE STEW WITH WHITE BEANS & PEPPERS


I'm so pleased with my latest slow cooker recipe.

It's one that I'll be making again very soon.

Sausages, white beans and colourful strips of bell peppers all cooked in a rich, flavourful gravy.

I served it on a bed of soft, creamy mashed potato.

It was fabulous!


SLOW COOKER STEWS


I've made many a stew in my slow cooker. You might call them casseroles.

They are easy, fuss-free and hearty.

Most of them are dump recipes, where you just throw all the ingredients in, but with this one, I like to take a little care to start the flavours off.

You can of course just add them all and hit the on button but I think a sausage stew benefits from a bit of pre-cooking.

It's really not much work at all and the final stew is so tasty.

WHAT YOU NEED TO MAKE SLOW COOKER SAUSAGE STEW


You just need a few simple ingredients to make this tempting dish.

  • Vegan sausages
  • Red onion
  • Garlic
  • Vegetable stock
  • Bell peppers
  • White beans  (I used tinned beans)
  • Chopped tomatoes
  • Tomato puree
  • Soy sauce
  • Dried oregano
  • Ground paprika
  • Salt & pepper

There are so many options when it comes to vegan sausages these days and I am sure you have your favourite.

We like to use frozen Linda McCartney sausages.

We've bought these for many years and we've not found any we like more.

They brown well and hold their shape, so they are good in lots of dishes.

For this stew, if you fry, grill or oven bake them before adding them to the slow cooker until they are well-done and brown.

PEPPERS



I used colourful, crisp bell peppers in this stew.

I sliced them into strips, but they do almost melt into the stew, so if you want bigger pieces in the final stew, then cut them into chunks instead.

You can use any colour of pepper, red, orange, yellow or green.

I just added two, but feel free to pop in an extra one.

WHITE BEANS



I used tinned cannellini beans for this dish, but if you like to soak your own beans, you could do that the night before.

If you don't have cannellini beans you could use butter beans or kidney beans.

They don't need any preparation, just drain them and throw them in.

They hold their shape well during cooking.

HOW TO MAKE A THICK, RICH SAUCE IN THE SLOW COOKER



One of the things to remember about using a slow cooker is that stocks or sauces don't thicken like they would in a pan.

Keeping the lid on and the slow cook stops the liquid from evaporating.

It's the reason why you need much less liquid than you would when cooking in a pot.

So a sauce or gravy needs a bit of help when it's slow cooking.

It's super simple to do.

Just add a spoonful of flour and mix it in.

Get your liquid quantities right though, or the flour will not save the sauce.

It always looks like there is not enough liquid, but don't be tempted to add more. Stick to the recipe.

HOW TO SERVE A SLOW COOKED SAUSAGE STEW



In my opinion, a rich sausage stew is best served with soft, creamy mashed potato, but it would also be good with some mashed neeps (turnip or swede, depending on where you come from) on the plate too.

You could also serve with steamed potatoes and lots of veg or with a fluffy baked potato.

Or why not serve it with some crusty bread to mop up all the delicious gravy?

Serve it the way that gives you the most pleasure or use up what you have in the fridge.



HOW LONG DOES SAUSAGE STEW TAKE TO COOK IN THE SLOW COOKER?



If you are out all day or just busy with other things you can set the slow cooker to low and cook this stew for 8 hours.

If you want to cook it a bit quicker, set it to high and cook for 6 hours.

Remember and leave a little extra time to saute the onions and garlic while the sausages, fry, grill (broil) or bake in the oven.

CAN YOU KEEP LEFTOVER SLOW COOKER STEW



You can definitely keep leftover slow cooker stew, but it's important to remove it from the slow cooker pot to allow it to cool quicker.

If food is left warm in a slow cooker, it gives bacteria a chance to grow.

Once cool, store it in an airtight container in the fridge for 3-4 days.

You can also freeze for 3-4 months, then defrost overnight in the fridge before reheating.

HOW TO MAKE SLOW COOKER SAUSAGE STEW

Making sausage stew - step 1 - cooking onions

STEP 1


Saute onions and garlic in a little olive oil until soft.

While the onions are cooking make up the vegetable stock.

Once the onions are cooked, add the stock and cook for a couple of minutes, it will lift all that lovely flavour from the pan.

STEP 2


Cook the sausages (grill, fry or oven bake) until well cooked, then add to the slow cooker pan.

Add your sliced peppers. You can add bigger chunks of pepper if you like.

    Add drained, cooked beans and the onions in the stock to the pan.

Add chopped tomatoes, spices, herbs and seasoning.

Give all the ingredients a good mix, add some flour to help thicken the sauce and mix well again.

Cook on low for 8 hours or high for 6 hours.

Vegan Slow Cooker Sausage Stew with White Beans & Peppers

An easy vegan sausage stew with white beans and peppers. slow-cooked in the crockpot with a rich sauce.

Ingredients

  • 1 tbsp olive oil
  • 1 red onion, halved and sliced
  • 2 cloves =, crushed
  • 350g (1 ½ cups) vegetable stock (2 stock cubes)
  • 12 vegan sausages
  • 2 x 400g (2 x 14 oz cans) tins cannellini beans, drained
  • 2 peppers, sliced or cut into chunks
  • 400g (14 oz can) tin chopped tomatoes
  • 3 tbsp tomato puree
  • 1 tbsp soy sauce
  • 2 tsp dried oregano
  • 1 tsp paprika
  • a good grinding of salt and pepper
  • 1 tbsp flour

Instructions

  1. Saute the onions and garlic in olive oil until soft.
  2. While the onions are cooking grill the sausages until well-cooked.
  3. Make up your stock and once the onions are cooked, add the stock to the pan. Stir well to catch any brown bits (flavour) from the bottom of the pan. Let it cook for a couple of minutes.
  4. Add the cooked sausages to the slow cooker pan and add the peppers.
  5. Now add the drained beans and the onions in stock.
  6. Add the tinned tomatoes, puree, soy sauce, herbs and spices.
  7. Season well with salt and pepper and mix well.
  8. To thicken the sauce add the flour and mix again.
  9. Cook on low for 8 hours or high for 6 hours.
  10. Serve with mashed potatoes and green veg.
  11. Enjoy!

Notes:

You may grill, fry or oven bake the sausages, grilling or oven baking will have less calories.

Use your favourite sausages.

This stew can be chilled. Remove from the slow cooker pot to cool and store in an airtight container in the fridge for 3-4 days.

Freeze this stew in portions fo 3-4 months. Defrost overnight in the fridge.

  1. I feel like, so often, people assume that vegan recipes won't be hearty and satisfying. This recipe will definitely prove them wrong! I love using my slow cooker - knowing dinner is cooking itself all day while I take care of other things! :D

  13. OMG - awesome! I have tried many similar recipes but this one was the best ever. Being just the two of us I halved the ingredients but stuck to the recipe, I used green peppers, and butterbeans. Hubby absolutely loved it! (And believe me, he's not easily pleased lol) I shall be making this once a week from now on. THANK YOU.

    2. Hiya Jacqueline, yes I made it. Luckily it fit in my 3.7L slow cooker. I put it on at about 8:30 am (I was running late) and went out. It wasn't done when we got back at 3 pm so we took the dogs to the beach. It was ready at about 4:30 pm and I just left it on the warm setting until 6:30 dinner time. It's absouloutley delicious with cheesy vegan mashed potato
