FAJITAS
I've found the love of fajitas again.
I often order them when we are out but got out of the habit of making them at home as my son would just not eat all that veg together in a wrap (he likes it in separate piles).
He loves my three bean chocolate chilli in wraps, in fact it's his favourite dinner, but vegetables in wraps, just no.
Kids, what can you do?
Last week I decided I was going to make them anyway and guess what, he ate them!
He didn't eat the full range of vegetables, but he did agree to have some baby corn, red pepper and red onion, which was a major breakthrough.
That boy prefers raw vegetables to cooked, so I'm counting this as a win.
SHEET PAN FAJITAS
As you know I love easy dishes, especially if they can be made in one pot, one pan or one casserole dish.
That's what's so good about they fajitas, the vegetables are cooked on a baking tray or sheet pan. You don't have to stand over them, stir and wait while they cook.
Just throw it all in, pop it in the oven and walk away.
Of course you get all that wonderful roast vegetable flavour along with the spices, so they'll taste better than any you've stir-fried in a wok for fajitas in the past.

SHEET PANS
I love my sheet pan. It was one of my best kitchen buys. Many a dinner is cooked on it.
It's more of an American thing, but really fabulous.
It's basically a baking tray but much more sturdy.
It has a good depth so you can add sauce, gravy or stock and comes in a range of sizes.
Mine is the full width of my cooker, so I can get lots on it and spread vegetables out in a single layer.
My sheet pan is a heavy grade aluminium and washes up a treat. Have a look for them on Amazon.
SHEET PAN DINNERS

SHEET PAN VEGETABLES
I added mushrooms, red onions, red pepper, yellow pepper, baby corn, mangetout and tenderstem broccoli to my sheet pan to roast for my fajitas.
You can use whatever vegetables you have in your fridge. Mediterranean vegetables work especially well.
Here are a few vegetables that are good in fajitas.
- baby corn
- beetroot
- broccoli
- carrots
- cauliflower
- green pepper
- jalapenos
- mangetout
- mushrooms
- red onions
- red pepper
- sugar snap peas
- sweet potato
- tenderstem broccoli
- tomatoes
- yellow pepper

FAJITA SPICE
I made my own fajita seasoning, but you can buy pre-mix fajita spice blends.
The reason I make my own is it's so easy to make, I know exactly what's in it and there are no preservatives or additives.
You can easily make it from standard ground spices and dried herbs.
If you make a batch, store it in a jar. It will keep for months and you can add it so many dishes.
Add it to your vegetables when making fajitas; add it to your veggie mince mixture for tacos, sprinkle it on freshly cooked corn on the cob, mix it with oil to make a marinade for tofu, add it to the mixture when making bean burgers and add it to coleslaw to give it a kick.
TORTILLAS
A good tortilla is one of the most important elements of a tasty fajita.
If the tortilla isn't up to scratch it doesn't matter what delicious fillings you heap in it, it will be a disappointment.
You can buy ready made tortillas or make your own following my recipe for homemade flour tortillas.
I like Mission Deli Wheat and White Tortillas, but there are lots to choose from.
Some supermarket brands I find a bit claggy, but they are getting better.
As for wholemeal, well I've never had a good wholemeal tortilla yet.
I have no idea why, but all the types I have tried have been unpleasant. I say stick to white or wheat and white mixes.

FAJITA TOPPINGS
Before you get to the step-by-step photos and the recipe, lets talk about the toppings.
The toppings take a simple fajita to the next level.
You can buy ready made salsa and guacamole or make your own.
Topping ideas:
- Chilli Flakes
- Grated cheddar (or vegan cheddar)
- Guacamole (it can contain dairy, so check the ingredients)
- Salsa (as hot or as mild as you like)
- Slices of avocado (toss in lemon juice so it doesn't discolour)
- Slices of jalapeno
- Slices of tomato
- Sour cream (for a vegan topping try vegan plain yoghurt or creme fraiche)

HOW TO MAKE SHEET PAN FAJITAS

STEP 1 - VEGETABLES
Lay your vegetables in a single layer on a sheet pan or a couple of baking trays.
Try not to stack them over each other too much or they will steam instead of roasting.
Now to season the vegetables.
Sprinkle your fajita seasoning over the vegetables. I was quite timid with the seasoning as I knew my son wouldn't like them too spicy, but you can add more.
Drizzle with oil and place in a pre-heated oven.
STEP 3 - TORTILLAS
Towards the end of the cooking time, wrap your tortillas in foil and pop them in the oven to warm.
When serving the tortillas, keep them in the foil to keep them warm. Take as many as you need and leave the rest covered.
STEP 4 - ROASTED VEGETABLES
Roast the vegetables until they are cooked and charred at the edges.
STEP 5 - LOAD THEM HIGH
Spread the warm tortillas with guacamole and top them generously with vegetables before adding salsa, grated cheddar (veggie or vegan) and sour cream (or vegan plain yoghurt).
Yield: 4 - 6 fajitas
Sheet Pan Vegetable Fajitas
A simple way to prepare your vegetables for fajitas in the oven for maximum flavour.

Ingredients:
Vegetables
- 1 tbsp olive oil
- 1 tbsp fajita seasoning
- 8 large closed cap mushrooms, thickly sliced
- 2 red onions, thickly sliced
- 1 red pepper, thickly sliced
- 1 yellow pepper, thickly sliced
- 12 baby corn, halved if thick
- 150g/5 oz mangetout
- 200g/7 oz tenderstem broccoli (or broccoli florets)
For each fajita
- 1 flour tortillas
- 1 tbsp guacamole
- 2 tbsp salsa
- 2 tbsp grated cheddar (veggie or vegan)
- 1 tbsp soured cream (or vegan plain yoghurt)
Instructions:
- Pre-heat the oven to 180c/160c fan/350f/gas mark 4.
- Spread the sliced vegetables in a single layer on a sheet pan or baking trays.
- Sprinkle over the fajita seasoning, you can add more if you like it more spicy.
- Drizzle olive oil over the vegetables and roast in the oven for 25-30 minutes until cooked and charred at the edges.
- Wrap the flour tortillas in kitchen foil and pop them in the oven to warm for the last 5-10 minutes.
- Spread your warm tortillas with guacamole then add vegetables and salsa, then top with grated cheddar and sour cream. Don't over fill, so you can eat them easily.
- Enjoy!
Notes:
Keep the warm tortillas wrapped in foil until you make each one to keep them warm.
You can also serve these spicy roast vegetables on sandwiches and wraps or toss through freshly cooked pasta.
For an extra kick, add chilli flakes or slice jalapenos to your fajitas.
Have napkins at the ready, fajitas can be a messy dinner if you overfill them.
