It's a decadent chocolate cake filled with fresh blackberries and made in minutes.
It's dairy-free and egg-free as are the fillings and toppings.
You would never guess this cake was vegan if you were presented with a slice.
It's a good chocolate hit with bursts of fruity pops of blackberry. The cake is super light and soft and has a gooey, lush filling and topping that makes me drool thinking about it.
Quick Vegan Lemonade Cake
I recently made a quick vegan lemonade cake using the same method and was eager to try a chocolate version.
The lemonade cake was made with a can of fizzy lemonade for that lemonade sponge cake flavour.
I topped it with lemon flavoured (vegan) butter cream and (vegan) whipped cream and sprinkles. We were very impressed with it. It was light and fluffy and a real treat.
For a special occasion I would rather make a cake from scratch using fresh ingredients and a lot of time and care, but I have to say this style of cake is fabulous for a quick cake if you are short of time or have last minute guests.

How to make a quick chocolate cake with blackberries
I've made this instant chocolate cake with blackberries and blackberry jam, but it would also be fabulous with fresh raspberries and raspberry jam as raspberry works so well with chocolate.
You could also make this a plain chocolate cake without the fruit, but the fruit adds a lot of flavour to the cake and makes it wonderfully moist and moreish.
I'll leave it up to you to decide.
1. Quick cake ingredients
This cake has only 5 ingredients.
- Betty Crocker Devil's Food Cake Mix (or Chocolate Cake Mix)
- 330 ml/12 fl oz can of cola
- Betty Crocker Chocolate Fudge Icing
- Blackberry jam
- Fresh blackberries
2. Prepare cake tins
Grease and line two 20cm/8 inch cake tins and preheat your oven before you begin this cake. It's super quick, so everything has to be ready so the cake can go in the oven the moment it is mixed.
3. Cake mix
Pour the cake mix and just over half of the fresh blackberries into a large mixing bowl, then toss the blackberries in the cake mix.
4. Adding fizzy cola
The raising agent in this cake reacts with the fizzy cola.
When the cola hits the raising agents in the mix it froths up, giving you are really light, airy mixture.
Fold it in gently so you don't knock out all the bubbles.
5. Prepared cake mixture
Pour the cake mixture equally into the two prepared cake tins and pop in the oven to bake until a skewer comes out clean.
6. Cool and fill the cakes
Leave the cakes to cool in the tins for a few minutes, then gently turn onto a baking rack to continue cooling. Carefully peel the baking paper off the base of each cake.
Once they are completely cool spread one with blackberry jam and the other with chocolate icing (or buttercream) and sandwich together.
The cake is quite soft, so you may need a bit of help sandwiching them together. Graham tipped one for me while I slapped the other on top. There may be a better way to do this, so do leave tips in the comment section if you have any.
7. Add toppings
Spread a generous layer of chocolate icing (buttercream), whipped cream (I used vegan squirty cream from Tesco, but this is optional) and fresh blackberries.
8. Serve
Serve yourself a generous slice of this sumptuously wanton chocolate cake and tuck in.

An instant blackberry and chocolate cake, made from cake mix, a can of fizzy juice and fresh blackberries. It's decadent, but quick. Perfect when you are short of time or have last minute guests.
ingredients:
- 425g box Betty Crocker Devil's Food Cake Mix
- 330 ml can fizzy cola
- 400g tub Betty Crocker Chocolate Icing
- 3 heaped tbsp blackberry jam
- 300g fresh blackberries
- a few squirts of vegan whipped cream (optional)

How to bake Quick Blackberry Chocolate Cake (vegan)
- Heat the oven to 180c/160c fan/gas mark 4/350f.
- Grease and line 2 x 20cm/8 inch cake tins.
- Pour the cake mix and just over half of the blackberries (reserve some for decoration) into a large mixing bowl.
- Pour in the fizzy cola and gently fold into the cake mix.
- Divide the cake mixture between the two cake tins and pop them in the oven for 25 minutes until springy and an inserted skewer comes out clean.
- Pop the pans on a baking rack to cool. Once they are cool enough to handle, gently tip out the cakes and peel off the baking paper.
- Gently place the cakes on a baking rack to cook completely.
- Once they are cool, spread one with jam and another with a third of the chocolate icing and carefully sandwich together, filling to filling.
- Place on a cake plate and top with a generous layer of chocolate icing, whipped cream (optional) and fresh blackberries.
- Enjoy!
