I love a savoury tray or sheet pan bake like this aubergine and chickpea bake. If you know me well you'll know I like dinner to be easy and stress-free. This is exactly that!

It's all cooked in one pan. First the aubergines and shallots, then the chickpea and spinach mixture.

This sheet pan dinner is packed with flavour and nutritious.

Why is aubergine called eggplant in the US?



The name for this fruit of a nightshade plant is known as aubergine in the UK and eggplant in the USA.

The British word aubergine, comes from the French and Catalan word for it's original arabic name al-badinjan.

In America it is called eggplant, which came from different areas of Europe who were describing small white globe vegetables that almost looked like eggs. It's not a good description of the purple vegetable we all know today, but it is a great name.

In some southern states of the US it is called guinea squash and in India it is still called brinjal

Health benefits of aubergine (eggplant)?


Aubergine is high in anti-oxidants and dietary fibre. It is a good source of Vitamin B1 and B6 and it also contains minerals such as copper, manganese and magnesium.

Aubergine is high fibre and low calorie, so the perfect food if you are watching your weight. Just be careful of the amount of oil you add as aubergine soaks it in like a sponge.

There are just 20 calories in 85g/1 cup of chopped aubergine.

Sheet Pan Dinners


Sheet pan dinners are basically meals that are made in a sheet pan, baking tray or roasting tin. It's a one-pan bake that makes dinner time a doddle.

I used to use a roasting pan to make these easy savoury bakes until I bought an American aluminium sheet pan that. It's heavy gauge, cleans up a treat and I love it.

A sheet pan is perfect for making sheet pan dinners or just for roasting vegetables. There's plenty of room to spread them out in a single layer for optimum crispness and it cleans up a treat.

Beware though, I measured my oven so I could buy the biggest sheet pan I could. When it arrived it didn't fit until I tried sliding it in right at the top of the oven. I can tell you that was a worrying moment. Thank goodness it fits. Measure carefully!

I like to make the best use of my oven when it's on, so I popped little potatoes on to roast at the same time as this tray bake, but it would also be good served with crusty bread and a salad or served over rice, couscous or cauliflower rice.

An easy aubergine, chickpea and spinach bake make in a sheet pan for a simple family dinner.\ Suitable for vegetarian, vegan and dairy-free diets.

ingredients:

  • 1 tsp olive oil
  • 2 medium aubergine, topped
  • 4 banana shallots, peeled
  • 2 x 400g tins chopped tomatoes
  • 2 x 400g tins chickpeas, drained and rinsed
  • 100g fresh spinach
  • 1  tbsp tomato puree
  • 2 tsp ground cumin
  • 1 tsp ground paprika
  • Salt and pepper
  • A few basil leaves

instructions:

How to cook Sheet Pan Aubergine (Eggplant) & Chickpea Bake

  1. Preheat the oven to 200c/180c fan/ 400f/gas mark 6.
  2. Cut the aubergines and shallots in half length ways and place in the pan. Spray with a little olive oil and season and with and pepper. Roast for 15 minutes.
  3. In a large bowl mix together the chickpeas, tomatoes, tomato puree, spices and spinach. Season with salt and pepper.
  4. Spread the chickpea mixture across the tray and roast for another 25 minutes.
  5. Top with basil leaves and serve.
  6. Enjoy!

  7. I like the sound of this sheet pan idea. It's not one I've tried, but next time I get hold of aubergines I think I might try your recipe. Easy fuss free suppers are just what I need and this one sounds delicious.
