Pickles usually take a while to make and then you have to wait for months until they mature.
Don't get me wrong, they are delicious and they perk up meals so much, but you really have to plan ahead or have a well-stocked store cupboard.
The joy in these pickles is you can make them while dinner is cooking and once they are cool they can be served alongside everything else.

How to serve quick pickled onions
10 minute pickled onions are a breeze to make, but what should you serve them with? Check out my 10 tasty ideas for inspiration.
- Serve with poppadoms at the start of a meal as a quick and light starter.
- Serve alongside a curry.
- Pile them high on a burger,
- Serve with bangers and mash (sausages and mashed potato).
- Chop and mix with cream cheese as a tangy dip or spread.
- Top a salad with quick pickled onions for that added tang.
- Pile high on hot dogs.
- Add to sandwiches, wraps and pitta with your favourite sandwich fillings.
- Fill a baked potato with cream cheese or grated cheese and top with quick pickled onions.
- When you've eaten all the scrummy onion, use the vinegar to make a tasty salad dressing. Just add some olive oil to the jar and shake well before drizzling.
Traditional Pickles and Chutney
Quick pickled onions are rather fabulous, but I don't want to put you off making traditional pickles and chutney.
Where the 10-minute pickles are fresh and zingy, properly matured chutneys and pickles have such an amazing depth of flavour and they are also easy to make.
How do you make chutney?
Here is my easy guide to making chutney.
- Sterilise jam jars. This can be done the traditional way in the oven or by popping them through a hot dishwasher cycle.
- Chop your chosen fruit and vegetables and add them to a large pot.
- Add currants or raisins if you are including them.
- Add spices, sugar and vinegar and heat gently until the sugar has dissolved then bring to the boil.
- Reduce the heat and simmer uncovered for about 30 minutes, stirring occasionally until the mixture is thick. You should be able to pull a wooden spoon across the base of the pan and leave a channel.
- Pour into the hot sterilised jars, being careful not to touch inside the jar or lid with your fingers. Fill to the top, fasten the lid and leave to cool.
- Store in a dark cupboard for up to a year. Serve once it has matured for 6-8 weeks and once the jar's open store in the fridge and use within 3-4 weeks.
- Enjoy!

My quick pickled onions are easy to make and only contain a few basic ingredients.
Red onion, red wine vinegar, water, maple syrup, chilli flakes, salt and pepper.

Easy 10 Minute Pickled Onions
An easy recipe for fresh and zingy red pickled onions made in 10 minutes. Ready to serve once cool. Fat free and low calories with only 35 calories per serving. Free printable recipe.

ingredients
- 1 large red onion
- 150ml/2/3 cup red wine vinegar
- 150ml/2/3 cup water
- 2 tbsp maple syrup
- 1 tsp salt
- ½ -1 tsp chilli flakes
- A good grinding of black pepper
instructions
- Peel and finely slice the red onion. Separate out the rings then add the onions to a clean jam jar or mason jar.
- Add all the remaining ingredients to a small pan and bring to a boil then turn off the heat.
- Carefully pour the hot liquid over the onions, pressing down the onions with a spoon until they are completely submerged.
- Fasten the lid and leave aside to cool. These will be ready to serve once cool, in about 30 minutes.
- Leftover pickled onions can be kept in the fridge for a week.
- Enjoy!

They Eileen happily keep in the fridge for a couple of weeks. They don't last as long as traditional pickles which a cooked with sugar snd vinegar.
