What is chipotle paste?
Chipotle paste is a puree made from smoked and dried chipotle peppers.
It usually also included onion, garlic, herbs, spices and vinegar.
The heat level of chipotle paste can very from brand to brand, so it can be wise to add a little at a time if you are not sure.
Some jars will give you an indication of hoe spicy it is.
I find it find when mixed with other ingredients.
Using it more as a flavouring rather than using is straight from ther jar.
Healthier tomato ketchup for adults and kids
This is a more adult version of tomato ketchup, but go lighter on the spices and kids love it too.
So if you have kids why not split the recipe in half and make half the recipe spicy for the adults and half the recipe milder for the kids, but do remember to mark your bottles or jars so you know which is which.
And the best thing about this recipe?
You control what's in it.
You control how much sugar and salt is added and there's no nasty additives.

Burgers love homemade ketchup
I served my chipotle ketchup at my last barbecue on homemade vegan burgers.
Grilling them on the BBQ gives them that extra smoky flavour that is so tasty.
And what goes well on homemade burgers?
Homemade ketchup!
I can't tell you how good they were.
If you want to try your own homemade veggie burgers, try these smoky red pepper bean burgers, black bean peanut burgers, Cajun sweet potato burgers or black bean, beet and Brazil nut burgers.

How to host a vegan barbecue
Here are few tips for hosting a veggie BBQ.
- Give yourself time - A BBQ takes time to heat properly, so make sure you build in enough time to heat the BBQ before guests arrive.
- No accelerant - Don't use anything to speed up the coals or BBQ bricks burning, it's dangerous and you don't want to taint the food with any chemical fumes.
- Keep it simple - Choose one type of vegan burger to grill or one type of vegan sausage and a vegetable kebab, the rest is just salad and condiments.
- Marinade - Make up a marinade the day before (or buy a jar) and pop it in the fridge.
- Salad dressing - Make that ahead too.
- Salads - Offer a selection of salads, think vegan potato salad, vegan coleslaw, a green salad, and pasta salad.
- Burger station - Make up a burger station where your guests can load up their burgers themselves into burger buns and add their own condiments like chipotle ketchup.
- Salad station - Do the same with the salads, just make it all a buffet where guests can help themselves. You will have more fun and be able to relax if you aren't running around serving everyone.
- Paper plates - use paper plates for easy clean up and have a bin bag under the table so everyone can tidy away after themselves.
- Homemade and shop-bought - Be kind to yourself, don't make everything, buy the salads, or the burgers, or the marinade and dressing. You don't have to do it all.
- Ice - buy a big bag of ice from the supermarket or grocery store, then fill a bucket or basin to keep the drinks cold, then people can help themselves.

How to make smoky chipotle ketchup
First, you saute the onion and garlic until soft, then add the spices (see the full printable recipe card below) giving them a minute to heat through and release their aroma and flavour, then add the tomatoes.
I made this spicy tomato ketchup with passata, but you could use tinned tomatoes in this recipe instead as it will be blended until smooth.
I finish the ketchup by whizzing the ingredients in my blender for a smooth finish, but you could use a food processor or a hand blender (immersion blender) in a jug if you don't have a power blender.
Just make sure you use a tall container or jug so it doesn't go everywhere while you're blending it.
What is the difference between passata and tinned tomatoes?
You may be wondering what the difference between passata and tinned tomatoes is?
Passata is basically sieved pureed tomatoes, which gives you a smooth sauce to add to dishes.
Tinned tomatoes (canned whole tomatoes or chopped tomatoes) are fresh tomatoes, peeled and chopped, in tomato juice.
Passata should not be confused with tomato puree.
What is the difference between passata and tomato puree?
Passata should not be confused with tomato puree.
Passata is made with uncooked tomatoes, but tomato puree is a paste made when the tomatoes are cooked down and strained.
It's more concentrated and should be used more sparingly than passata.
Sterilising jars or bottles
Even though this is not a preserve or pickle, it is still important to sterilise the jars before adding your homemade ketchup if you plan to keep it for longer than a few days.
You can sterilise jars in the oven the traditional way, but if you have a dishwasher, I recommend timing your dishwasher so you can include your jars and sterilise them that way.
Just be careful not to touch the inside of your jars, lids and jam funnel when removing them from the dishwasher or you'll have to start again.
Jam Funnel
I mentioned a jam funnel.
It's a handy piece of kit.
It really makes jarring anything easier, so it's a good investment, but it should be sterilised too before you use it and also be careful to handle it by the edges once it is sterilised.
Use the jam funnel to neatly pour your ketchup to the jars while both the jars and ketchup are still hot.

Do I have to sterilise jars?
If you are keeping the ketchup for longer you need to sterilise to prevent a build up of bacteria.
However, if you are making this for a family gathering or BBQ and it will most likely be used on the day, you can just add it to a clean jar.
It would be ok in the fridge in an airtight container for 3-4 days, but will last longer if you add to sterilised jars.
