Lunches can be boring and they often become quite repetitive. I mostly have a smoothie for lunch when I'm at work, but when I'm working from home, have friends over or it's the weekend, I want something a bit more special.
I've put together a collection of some of the best vegan lunches. Filling, healthy and delicious.
Tuck in!

Lots of great ideas here, thanks. I'm trying to eat less meat at lunch times so this has some lovely inspiration for me
ReplyDeleteOh good Lucy. I hope you enjoy the recipes :)
DeleteHello! This is so brilliant, I particularly love the look of no.15 and 19. Ooh, but the pastry section...
ReplyDeleteThanks Lucy I am so glad it is inspiring you :)
DeleteThanks- these are all awesome! Will make a shortlist to try... hope your smoothie diet is still going strong- I loved the look of all those smoothies :)
ReplyDeleteGood! And yes on and off with the smoothie. Diet. I am mostly doing it on workdays now and did have a glass of wine tonight.
DeleteSounds very sustainable to me- a little of what you fancy :)
DeleteThat's true. I think the minute you start to think of it like a diet and beat yourself up about it, you fail. It's just getting used to it really. Good habits.
DeleteI pretty much love every single one of these but the burgers are calling my name ;)
ReplyDeleteOh yes and all that delicious pastry ..
Yes I love those too! I can personally recommend the Cajun burgers a they are our family favourite.
DeleteWow Jacqueline these look amazing. I'm always looking for vegan options with a non-cheese eating boyfriend! Helen x
ReplyDeleteBrilliant and yes same here, although I am happy with them too :)
DeleteLovely, surprising collection you have here. I'm seeing loads of gorgeous treats I would love to try. Never mind that they are vegan - they look well-lush! Thanks so much for including a few of mine.
ReplyDeleteThanks Kellie and you are welcome :)
DeleteThanks for sharing a couple of my recipes! What an amazing round-up. I'm always on the lookout for new vegan recipes - such great inspiration here! Thanks Jac!! :)
ReplyDeleteThat's ok Kaitlin and glad the roundup inspired you :)
DeleteI can’t find the black bean and carrot sausages😢 have you stopped doing those?
DeleteNot intentionally no, but they aren't showing up in search for me either. I will have to look into it. In the meantime have you tried my puy lentils and mushroom sausages.
Deletethank you for those suggestions. I am not keen on spicy things so will figure out what best suits me.
ReplyDeleteGill in Canada
Ah well you can always adjust the spice Gill to suit your tastes :)
Deleteif my lunches looked like that I would be so happy :-)
ReplyDeleteHehe, me too. Mine usually look like a smoothie (ps they are), although I had a baked potato and beans today.
DeleteWhat a colourful collection. Really beats the brown rice image to a pulp
ReplyDeleteOh yes it certainly does that. I had to think what you were meaning for a minute but yes some people think that's what vegan cooking is. In actual fact it's vibrant and exciting.
DeleteWow what an incredible selection of recipes. Lots of tasty lunch ideas, no excuses now!
ReplyDeleteThanks Janice. They fairly make your mouth water, don't they?
DeleteThat BBQ chickpea salad. Oh yes please.
ReplyDeleteOh I know it looks great, doesn't it?
DeleteI'm not a lover of vegan food normally, as I love my cheese too much! BUT, with a selection like this on offer, I could be persuaded to eat vegan more often! Karen
ReplyDeleteEven if you have one meal that's vegan a week, it would be a very healthy choice and cheaper too you'll probably find Karen.
DeleteExcellent post Jac. I reckon that most vegans eat a greater variety of foo than most omnivores. All these dishes look delicious.
ReplyDeleteI think you are probably right. There is usually more fresh produce and more thought goes into the meals. A far more natural way of eating.
DeleteSo many delicious looking ideas here. I tend to go vegetarian at lunch time, i.e. I have something involving cheese! But I'm trying to make my lunches a bit healthier so will be trying some of these out.
ReplyDeleteI'm so glad this roundup has inspired you Jen :)
DeleteYou have me craving a vegan burger now, never thought I would say that! Love this post Jac, will be back to try out some of these lunches, so inspired.
